The grape variety is premsal from vineyards in the Felanitx region of Mallorca, where the nature of the soil locally known as “call vermell” provides the unique character and balance of the fruit. A 10 hour maceration process is followed by soft pressing and careful racking. Fermentation takes place at 16 ºC, one half in French oak casks and the other half in cement tanks. The wine is aged and fermented 50% in casks and 50% in cement tanks, and kept in contact with its lees for a period of eight months. Pale, lemon yellow in colour with aromas of apples, lime, spice, white flowers and some floral touches. Dry and medium bodied with low-ish acidity and spicy, oaky flavours that give way to some very tasty peach and pear fruit. The finish is more floral and spicy.
